Flying Rooster Wines is a wine consulting and producing company founded in the spring of 2003 to serve the wine and restaurant industry, as well as the consumer.

Flying Rooster is also a wine producing company, created by 4 friends for fun. We produce limited amount of wines from Oregon under 2 labels, Flying Rooster and Pink Sweater. We do not have our own Winery. At this time we produce our wines at another winery, which makes us a Virtual Winery!

About the Owner

Pascal Valadier

Pascal – Owner, Winemaker, Vineyard Manager & Wine Educator

Pascal’s journey with wine began in childhood, immersed in the traditions of Western Mediterranean culture. Growing up in a military family, he spent summers with relatives in Languedoc, where vineyards and family wineries sparked his lifelong passion.

A skilled craftsman in every stage of the process—from planting and harvest to blending and bottling—Pascal has built a career rooted in both tradition and innovation. After serving in a French Air Force fighter squadron, he went on to study enology, graduating in 1991. His early experiences included an internship in Oregon, which soon led to winemaking roles at several respected Oregon wineries.

In 2018, Pascal moved to the Washington, DC area to be closer to his parents in France, balancing his work managing a wine and spirits shop with continued hands-on winemaking. Today, he produces small, distinctive lots out of Torii Mor Winery in Dundee, Oregon, where he experiments with Pinot Noir, Grenache, Carignan, and Chardonnay

Pascal brings to his work not only decades of expertise but also a deep curiosity and passion for the many expressions of wine, always blending Old World heritage with New World creativity.

No jobs too big or too small, competitive rates.

 

  1. Winery creation: from ground up, or remodeling of existing facility, from equipment to layout, to marketing, distribution, and branding. Terms are negotiable, in function of the size of the project.

  2.  Winemaking: education on proper winemaking techniques enhancing quality, sanitation, efficiency in the cellar.

  3.   Vineyard development and management: from the ground up to restoration of existing fields, to efficiency of quality production.

  4.  Wine support for restaurant, deli and specialty shops: How to choose your wines in function of your menu; develop by the glass popular program, properly storing your wines, and staff training.

  5.  Education and catering for private public (Fee structure per person). Have evening or afternoon of fun while being educated about wine and food, without snobbism.

  6.   Personalized Negociant brands developed from CA/WA/OR bulk wine to offer every customer its own wine line (minimum 280 cases purchase). We provide all you need to succeed: packaging design, all documents needed to get the wines to your warehouse, as well as the wine in bottle
